<p>Homemade pasta is like a fluffy white cloud: light, soft, tender and delicious. Good pasta makes the sauce come to life and if done correctly, forms a beautiful harmony like a great Beatles tune. About 10 years ago during a visit to Italy, I stopped at the Bottene factory in Vincenza then at Molino Caputo in Napoli. After seeing the facilities with my own eyes, I knew I could make homemade pasta, gnocchi and ravioli with the same ingredients and machines used in Italy.</p>
<p>I was told by all the pundits it could not be done but I would prove them wrong and succeed in making the best homemade pasta, ravioli and gnocchi in New Jersey, and possibly the entire East coast.</p>
<p>Pasta has been made by hand “fatto a mano” for many, many centuries with one simple recipe: flour, water, salt, and eggs if desired. But its simplicity has inherent complexities. What type of flour? Why that flour? How much water? Eggs or no eggs? Then comes the choice of machine, of which there are plenty to choose from, but only a few that process the dough with hand-like movements.</p>
<p>So I am going to reveal some of my own research to help pasta lovers around the world.<a href="http://restaurant.basilt.com/wp-content/uploads/2011/05/Screen-shot-2011-05-19-at-10.47.00-AM.png"><img class="alignright size-medium wp-image-578" title="Homemade Pasta" src="http://restaurant.basilt.com/wp-content/uploads/2011/05/Screen-shot-2011-05-19-at-10.47.00-AM-550x365.png" alt="" width="360" height="238" /></a></p>
<ol>
<li>Use Caputo flour. I use Caputo 	“00” pasta fresca e gnocchi flour mixed with Caputo semolina 	flour. Based on your water, mixer, etc. you will have to judge 	what’s best for you. Caputo has many flours, with different 	millings and protein contents.</li>
<li>The machine: clearly doing it by 	hand with grandma’s Imperia hand crank machine is the preferred 	method, but when you are making pasta for busy restaurants you need 	something automatic. I love the Bottene machines (we own 6) because 	they are made very well and priced very fairly, but maybe not so 	well priced right now with the euro at 1.48 at the time of this 	writing. Bottene machines are work horses and they have a 100 	different dies. The magic here is the dies (the piece that the pasta 	extrudes from) are all brass, a very soft metal that dings and dents 	and gives the pasta its identity, and more importantly makes the 	pasta rough so the sauce sticks to it, yummy. Buy Bottene the 	machines, they are worth every penny.</li>
<li>Always use sea salt.</li>
<li>Don’t be shy, an egg or two 	makes great pasta better.</li>
<li>Leave the dough wet, it is hard to 	handle and work with but makes lighter pasta.</li>
<li>When making gnocchi use i<em>mpastata</em> ricotta. It is drier than regular ricotta, so you need less flour, 	and use less flour for lighter gnocchi. My trick: use 1 egg per 3 	pounds of cheese. Please only use Caputo gnocchi flour.</li>
</ol>
<p>The sauce choices are unlimited: pesto, pomodoro, puttanesca, bolognese, marina, alfredo, carbonara, norma …. Sit down and decide to do it right! Bring some wholesome goodness to your family and friends. Make some homemade pasta with  your favorite sauce, open a bottle of wine and float up to pasta heaven.</p>

<h3>Customs of the Day</h3>
<h3><span style="font-family: Arial,sans-serif;"><span style="font-size: x-small;">St. Joseph&#8217;s Day is a big Feast for Italians because in the Middle Ages, God, through St. Joseph&#8217;s intercessions, saved the Sicilians from a very serious drought. So in his honor, the custom is for all to wear red, in the same way that green is worn on St. Patrick&#8217;s Day.</p>
<p>Today, after Mass (at least in parishes with large Italian populations), a big altar (&#8220;la tavola di San Giuse&#8221; or &#8220;St. Joseph&#8217;s Table&#8221;) is laden with food contributed by everyone (note that all these St. Joseph celebrations might take place on the nearest, most convenient weekend). Different Italian regions celebrate this day differently, but all involve special meatless foods: minestrone, pasta with breadcrumbs (the breadcrumbs symbolize the sawdust that would have covered St. Joseph&#8217;s floor), seafood, Sfinge di San Giuseppe, and, always, fava beans, which are considered &#8220;lucky&#8221; because during the drought, the fava thrived while other crops failed (recipes below).</p>
<p>The table &#8212; which is always blessed by a priest &#8212; will be in three tiers, symbolizing the Most Holy Trinity. The top tier will hold a statue of St. Joseph surrounded by flowers and greenery. The other tiers might hold, in addition to the food: flowers (especially lilies); candles; figurines and symbolic breads and pastries shaped like a monstrance, chalices, fishes, doves, baskets, St. Joseph&#8217;s staff, lilies, the Sacred and Immaculate Hearts, carpentry tools, etc.; 12 fishes symbolizing the 12 Apostles; wine symbolizing the miracle at Cana; pineapple symbolizing hospitality; lemons for &#8220;luck&#8221;; bread and wine (symbolizing the Last Supper); and pictures of the dead. There will also be a basket in which the faithful place prayer petitions. </span></span></h3>
<h3><span style="font-family: Arial,sans-serif;"><span style="font-size: x-small;"><br />
The cry &#8220;Viva la tavola di San Giuse!&#8221; begins the feasting and is heard throughout the day. When the eating is done, the St. Joseph&#8217;s altar is smashed, and then three children dressed as the Holy Family will knock on three doors, asking for shelter. They will be refused at the first two, and welcomed at the third, in memory of the Holy Family&#8217;s seeking of hospitality just before Christ was born. This re-enactment is called &#8220;Tupa Tupa,&#8221; meaning &#8220;Knock Knock.&#8221;</p>
<p>The day ends with each participant taking home a bag that might be filled with bread, fruit, pastries, cookies, a medal of St. Joseph, a Holy Card and/or a blessed fava bean. Keep your &#8220;lucky bean,&#8221; and let it remind you to pray to St. Joseph. 4 cans of drained, skinless, boneless sardines</p>
<p>Heat oil in large pot, and saute in it the garlic and pepper flakes. Add the fennel, tomatoes, paste, and basil. Cover and let simmer 30 minutes &#8217;til fennel is tender. Add the sardines and simmer a few more minutes.</p>

<p><span style="font-family: Arial,sans-serif;"><span style="font-size: x-small;">This is the general rule that applies to all individual graces given to a rational creature. Whenever divine grace selects someone to receive a particular grace, or some especially favoured position, all the gifts for his state are given to that person, and. enrich him abundantly.</p>
<p>This is especially true of that holy man Joseph, the supposed father of our Lord Jesus Christ, and true husband of the queen of the world and of the angels. He was chosen by the eternal Father to be the faithful foster-parent and guardian of the most precious treasures of God, his Son and his spouse. This was the task which he so faithfully carried out. For this, the Lord said to him, &#8220;Good and faithful servant, enter into the joy of your Lord.&#8221;</p>
<p>A comparison can be made between Joseph and the whole Church of Christ. Joseph was the specially chosen man through whom and under whom Christ entered the world fittingly and in an appropriate way. So, if the whole Church is in the debt of the Virgin Mary, since, through her, it was able to receive the Christ, surely after her, it also owes to Joseph special thanks and veneration.</p>
<p>For he it is who marks the closing of the old testament. In him the dignity of the prophets and patriarchs achieves its promised fulfilment. Moreover; he alone possessed in the flesh what God in his goodness promised to them over and again.</p>
<p>It is beyond doubt that Christ did not deny to Joseph in heaven that intimacy, respect, and high honour which he showed to him as to a father during his own human life, but rather completed and perfected it. Justifiably the words of the Lord should be applied to him, &#8220;Enter into the joy of your Lord.&#8221; Although it is the joy of eternal happiness that comes into the heart of man, the Lord prefers to say to him &#8220;enter into joy&#8221;. The mystical implication is that this joy is not just inside man, but surrounds him everywhere and absorbs him, as if he were plunged in an infinite abyss.</p>
<p>Therefore be mindful of us, blessed Joseph, and intercede for us with Him Whom men thought to be your Son. Win for us the favour of the most Blessed Virgin your spouse, the mother of Him Who lives and reigns with the Holy Spirit through ages unending. Amen.</span></span></p>

<p><strong>A Brief Introduction by Bobby Rallo</strong></p>
<p>My brother,  Victor, decided that we should head to New York City for a prestigious  wine tasting of Chianti Classico, Vino Nobile di Montepulciano, and  Brunello di Montalcino hosted by the author and creator of <em>Windows on the World Wine Course</em>,  Kevin Zraly.  But first, we had to make the commute to NY with our pal,  Anthony Cammaratta, and a large eggplant parmigiano for his staff at  Salvatore Ferragamo.  It was an interesting commute, to say the least!   Cars, planes, trains, busses and stairs, we managed to get to our  destination&#8230;with large eggplant parmigiano in tow.</p>
<p>After a  light breakfast and coffee, we arrived at the Hilton for a very elegant  wine tasting.  (Although, if I may add, the staff at Basil&#8217;s knows how  to pour and serve wine better)!  The wine flights selected by Zraly from  a blind tasting he did in Italy were his 12 favorites and were as  follows (top 9):<strong> <a href="../?p=543">Vic and Bobby&#8217;s Ranking</a></strong></p>
<p><strong> </strong><strong>4 things you can taste: sweet, sour, bitter, salt. No salt in wine,what&#8217;s left: sour, bitter and 	sweet.<br />
10,000 known smells, 200 smells in wine. The nose is a very important part of wine tasting.</strong></p>
<p><strong>La Madonnia. Chianto Classico 	DOCG 2007 Riserva $20 </strong><span style="color: #ff0000;"><strong>rated #3<br />
</strong></span><strong>90% Sangiovese, 5% Merlot and Colorino<br />
</strong> Exceptional vintage fresh cherry, clear, excellent color, tannins and a very dry to the 	finish, very acidic. Sometimes the first wine you taste especially Sangiovese is very acidic 	should taste with food. First wine tasted light to medium body</p>
<p><strong>Fontodi, Chianti Classico DOCG 	2007 Riserva “Vigna del Sorbo $60 </strong><span style="color: #ff0000;"><strong>rated 	#2<br />
</strong></span><strong>100% Sangiovese Greater extraction then first wine<br />
</strong> Nose was pretty, fresh cherry and black fruit. Dry on the finish with balanced acidity and 	fruit. You feel the tannins you cannot taste tannins. Medium to full bodied.</p>
<p><strong>Castello di Ama, Chianti 	Classico DOCG 2007 Retail $45 </strong><span style="color: #ff0000;"><strong>rated #1</strong></span><strong><br />
80% Sangiovese 20% Malvasia Nero, Cabernet Franc and Pinot Nero<br />
</strong> Mushrooms, musky nose, dry and full bodied. Cherries, color slightly unfiltered, powerful, 	fruit, balanced acidity and tannins. Blackberries in the finish on the back of the tongue.	Probably the best Chianti of the three for aging.</p>

<p><strong>Salchero Vino Nobile di 	Montepulcino 2007 $35. 50,000 bottles</strong><strong>100% Sangiovese</strong><br />
Exceptional year. Light to medium body. Black pepper and spice on the palate less 	tannic 	and acidic then Chianti. Tannins dried out my mouth. Cherries very tannic, great age 	ability.<br />
Riserva  In Italy the age is guaranteed by the DOCG. California and France Riserva has 	no aging rules.</p>
<p><strong>La Baccesca Vino Nobile di 	Montepulciano 2007 $27 190,000 </strong><span style="color: #ff0000;"><strong>Rated #2</strong></span><strong><br />
90% Sangiovese, 10% Merlot<br />
</strong> Exceptional year. Alcohol in the nose, elegance in fruit. Ample tannins that  blocked out 	fruit in the wine. Tight fisted, not ready to drink. Very good age ability</p>
<p><strong>Poliziano, Vino Nobile di 	Montepulciano 2007 $31  180,000 bottles </strong><span style="color: #ff0000;"><strong>Rated 	#1</strong></span><strong><br />
80% Sangiovese, 20% Colorino, Canaiolo, Merlot<br />
</strong> Exceptional year, great maturity in the nose nice toasty smell. Deep dark and extracted 	full of fruit. Leather, great balance and an explosion of fruit. Long tannins at the end in 	the back of the palate.</p>
<p><strong>Pinino, Brunello di Montalcino 	DOCG 2006 $60  41,000 bottles</strong><span style="color: #ff0000;"><strong> Rated #2</strong></span><strong><br />
</strong> Lightest color, fresh cherry and great fruit and oak. Medium acidity and oak tannins. 	Buttery and refreshingly elegant.</p>
<p><strong>Castelgiocondo, Brunello di 	Montalcino DOCG 2006 $65 230,000 bottles </strong><span style="color: #ff0000;"><strong>Rated 	#3</strong></span><strong><br />
</strong> Fennel notes in the nose bright and vibrant color. Very round with nice fruit, higher tannic 	acid and oak tannins. This wine needs more time in the bottle. Remember good 	Brunello’s can age for 20-30 years.</p>
<p><strong>Uccelliera Brunello di 	Montalcino DOCG 2006  $62  22,500 bottles </strong><span style="color: #ff0000;"><strong>Rated 	#1 Best of current vintages</strong></span><strong><br />
</strong>Deepest in color and 	complexity, Musty leather nose with nice balance of fruit. Very deep 	extraction with up front fruit, total balance of fruit, acid and 	tannins. Best wine tasted. Extremely long Finish bottles Andrea 	Cotonesi is a friend and I believe him to be one of the best up and 	coming winemakers in Montalcino.</p>
<p><strong>Principe Corsini Fattoria Le 	Corti Chianti Classico DOCG Riserva Don Tommaso 1999 (1.5 liter) 	$150  1,200 bottles </strong><span style="color: #ff0000;"><strong>Best Chianti</strong></span><strong><br />
</strong> Smoky oak (oxidation) in a good way round and elegant with tons of fruit and still very 	acidic and with pronounced oak tannins. Ready to drink, excellent wine and drinks 	perfectly today!!!</p>
<p><strong>Dei Vino Nobile di Montpulciano 	DOCG 1999 Riserva  $145<br />
</strong> Subtle leather, more cherry fruit, autumn leaves, tar like, an aged wine with tons of fruit, 	and tons of tannins still very young for its age. Great elegance.<br />
<strong>Col D&#8217;Orcia Brunello di 	Montalcino DOCG 1991 $200 </strong><span style="color: #ff0000;"><strong>Best of the 	Tasting</strong></span><br />
The oldest wine tasted today, to me this is exactly how Brunello should age! Mushrooms in 	the nose, color is still excellent. Ready to drink, tannins and acidity in balance with fruit. 	Ready today or age with grace for 10 more years. Absolutely delicious.</p>

The first Restaurant Week in November 2009 drew 56 restaurants, the second in April 2010, 75. 			<content:encoded><![CDATA[<p>Praises continue to pour in for <a href="../" target="_blank">Red Bank brewery and Italian Grill</a> Basil T’s.  The restaurant and its hand crafted beer received high reviews in recent restaurant rankings from the readers and writers of two leading New Jersey magazines.</p>
<p><span style="text-decoration: underline;">New Jersey Monthly</span>’s 27th Annual Readers’ Choice <a href="http://njmonthly.com/articles/restaurants/2010-readers-and-critics-restaurant-poll.html" target="_blank">Restaurant Poll</a> awards the brews of the Red Bank brewery and Italian restaurant as the winner in the Best Beer and Best Pub categories in Central Jersey.</p>
<p><span style="text-decoration: underline;">Inside Jersey</span>’s <a href="http://www.nj.com/insidejersey/index.ssf/2010/07/best_of_nj_restaurants.html" target="_blank">Best of N.J. Restaurants</a> feature listed Basil T’s as the winner for Best Brew Pub in New Jersey.</p>
<p>Basil T’s continues to impress critics and guests with its fresh Italian meals and homemade beer.  The 24-year-old restaurant has become a local favorite and one of the best restaurants and bars in Red Bank.  The <a href="http://www.basilt.com/beers.php" target="_blank">Red Bank microbrewery</a> features a minimum of six hand crafted ales each season.</p>
<p>All of the beers are brewed by Gretchen Schmidhausler, who is only the second Head Brewer in Basil T’s history.  She has been brewing beers for over 14 years and is a graduate of the American Brewers Guild’s Craftbrewers Apprenticeship Program, in Woodland, CA.</p>
<p>Basil T’s was recently featured in<span style="text-decoration: underline;"> Draft Magazine</span>’s Online Exclusive: Top 10 Beers Brewed by Women, honoring Basil T’s brewer Gretchen Schmidhausler.</p>

			<content:encoded><![CDATA[<p>Brewmaster Gretchen Schmidhausler of Basil Ts Brewery &amp; Italian Grill, one of the best <a title="Bars in New Jersey" href="http://www.basilt.com/contact.php" target="_blank">bars in New Jersey</a>, recently returned from a trip to Germany where she had the enviable opportunity to sample some locally-brewed varieties of beer.</p>
<p>During her stay in Bavaria, one of the world&#8217;s true beer meccas, Gretchen visited Wurstkuchl, a tavern situated along the Danube River .  Wurstkuchl (pictured, right) has roots that date back to the 12th century when the <a href="http://restaurant.basilt.com/wp-content/uploads/2010/05/Wurstkuchl1.jpg"><img class="alignright size-medium wp-image-305" title="Wurstkuchl" src="http://restaurant.basilt.com/wp-content/uploads/2010/05/Wurstkuchl1-550x412.jpg" alt="" width="347" height="259" /></a>location provided slow-simmered meals for stonemasons, dockers and crane workers.</p>
<p>Though now geared largely toward visitors, Wurstkuchl serves much the same purpose it did hundreds of years ago: providing its patrons with delicious food and drink.</p>
<p>While there Gretchen enjoyed Bavarian wheat beers, dark and golden lagers, and Rauch (smoked) beers.  The tastes and aromas will serve as inspiration for future beers brewed at the <a title="Red Bank Bar" href="http://www.basilt.com/menus/index.php" target="_blank">Red Bank bar </a>Basil T&#8217;s.</p>

The catch phrase for Olive Garden is “When you&#8217;re here, you&#8217;re family.” Despite the pleasant message of a welcoming dining environment, when you&#8217;re there, you aren&#8217;t <em>literally</em> family. Olive Garden isn&#8217;t going to send you a card on your birthday or expect an invitation to your wedding. But at Basil T&#8217;s, we follow our slogan to the T (pun intended).</p>
<p>If you walk into the kitchen of our <a title="nj italian restaurant" href="http://www.basilt.com/">Italian restaurant in NJ</a>, you won&#8217;t see any bags of pasta, but you might spot bags of flour. That&#8217;s because we make all our pasta, from scratch, in house.  We make the dough, we cut the rigatoni, we ruffle the pappardelle. Doing this adds a unique freshness and authentic taste to all of our pasta dishes we serve at our <a title="nj restaurant" href="http://restaurant.basilt.com/about/">NJ restaurant</a>.</p>
<p>Walk around a little more, and you&#8217;ll see tomatoes. Lots and lots of tomatoes. Here in the Garden State, we take advantage of the abundance and freshness of our state vegetable, the Jersey Tomato. We purchase all our tomatoes from local farms whenever they are in season and are proud to say that Jersey tomatoes make some of the <a title="nj italian restaurant" href="http://www.youtube.com/watch?v=lzFqgWPLrTI">best Pomodoro sauce</a> around. All our tomatoes are ripened in our NJ restaurant for the juiciest, most flavorful taste possible. Many places will use tomatoes as soon as they receive them, but we know you can&#8217;t rush perfection.</p>
<p><a href="http://restaurant.basilt.com/wp-content/uploads/2010/03/redbankbasilts.jpg"><img class="alignleft size-full wp-image-262" title="redbankbasilts" src="http://restaurant.basilt.com/wp-content/uploads/2010/03/redbankbasilts.jpg" alt="" width="436" height="286" /></a>Jersey tomatoes aren&#8217;t the only seasonal ingredients we include in our menu. We carefully select every element of every dish, and compliment our menu with items like dandelion greens, broccoli rabe, ramps, wild mushrooms, fava beans, watermelons, cantaloupe, apples during their peak of freshness and seasonality. We also only use fresh, never frozen hand-cuts of seasonal fish, and avoid farm raised seafood products as we believe the quality and taste are sacrificed.</p>
<p>After you&#8217;ve had the homemade pasta topped with the homemade sauce, you&#8217;ll probably want to wash it all down with, you guessed it, our homemade beer. (Our gold medal, <a title="red bank brewery" href="http://basilt.com/brewer.php">award winning, homemade beer</a> to be precise.) With five deliciously distinct styles and our many seasonal brews, there&#8217;s a beer for <em>every</em> taste and a <a title="nj brewery" href="http://basilt.com/sampler.php">Sampler</a> if you&#8217;d rather taste <em>every</em> beer from our<a title="red bank brewery" href="http://www.basilt.com/beers.php"> Red Bank brewery</a>.</p>
<p>Last but certainly not least, is dessert (if you&#8217;ve managed to save room for it) made by our own pastry chef. Our house made pastries are inspired by authentically Italian recipes from places like Attanasio Pastry Shop in Naples, birthplace of the Sfogliatella. Basil T&#8217;s owner Victor Rallo wanted to make sure our recipe was authentic as possible, so he dropped in on the kitchen of Attanasio on his last trip to Naples.</p>
<p>At Basil T&#8217;s, we have a passion for everything we serve. Our approach to dining embraces the entire spectrum of fresh and homemade in order to bring that passion to you. That&#8217;s why when we say fresh and homemade, we mean Fresh and Homemade!</p>

<p>Our customers asked us about Basil T&#8217;s famous pasta fagioli, so we decided to film Victor Rallo making his famous Italian dish. An addition to Basil T&#8217;s video recipe series, Victor Rallo shows Red Bank Italian food lovers how he puts together his pasta fagioli in under six minutes.</p>

			<content:encoded><![CDATA[<p>Well, it&#8217;s that time of year again&#8230;and that means I&#8217;ll be brewing up a whole array of seasonal beers over the next two months. This year, I&#8217;m leaning toward real winter warmers, darker ales with lots of flavor to keep you toasty on a cold winter night. Fans of our Porter will be happy to hear the original Big Vic&#8217;s Short Order Porter is now on tap. It should be around until Iceboat Ale replaces it in February.</p>
<p>If you&#8217;re looking for a tasty new seasonal, we have a Honey Brown Ale  &#8212; made with 50 lbs of local honey &#8212; coming up at the end of November. Mid-December, look for the return of Red Ribbon Ale, made with Star Anise. A Gingerbread Ale made with molasses, ginger and cinnamon will follow around the New Year. Hope you have some time during this busy season to join us for a pint (or two). Cin Cin!</p>

<p><span style="font-weight: bold; text-decoration: underline;">Before you start, you&#8217;ll also need&#8230;</span></p>
<ul>
<li> Pot of boiling water for tomatoes</li>
<li> Bowl of ice water</li>
<li> A large appetite and preference for Fresh cooked Italian food</li>
</ul>
<p>Take the tomatoes and remove the core using a knife.  Slice an X on the bottom of the tomato so that the skin will peel off after parboiling or blanching.  Place tomatoes into a pot of boiling water for about 1 minute.  Remove the tomatoes with a scooper and place them directly into the ice water.  After they cool for a minute or so, take them out and peel off the skin.  With the X you cut in the tomato skin before, the skin should peel off easily in four sections.  After peeling the tomatoes, slice the tomatoes however you prefer (we recommend dicing them into half-inch squares) and place them in a bowl.  Next, skin and dice the whole onion (we recommend a large Spanish onion).  Next crush 3-4 cloves of garlic using the side of a large knife.  Now you&#8217;re ready to cook.</p>
<p>Coat the bottom of a large pot in olive oil and add the diced onions and crushed garlic to the pot.  Cook at a medium heat for 3-5 minutes until the onions are translucent and golden brown.  At this point, your neighbors will smell you cooking fresh tomato sauce, so you may want to lock your doors accordingly.  Add the chopped/diced tomatoes to the pot, as well at some pepper, (fresh ground works best)  salt, and some chopped basil leaves.  Stir pot a bit and let it cook for 5-8 minutes at a high heat, stirring occasionally.</p>
<p>You now have a fresh, homemade tomato based sauce (always better and fresher than a canned sauce) which can be used for a multitude of dishes in Italian cooking such as pasta, tomato based soups,  chicken cacciatore, and many more.  <span style="font-weight: bold;">Buon Appetito!</span></p>

<p>Overall quality: A-</p>
<p>Value: B+</strong></p>
<p>You’re buying more than wine here. You’re buying <em>history</em>. The handsome, bearded man on the label is Odoardo Beccari, who founded Vignavecchia in 1876. He retired to this estate in Radda after a life as an explorer, botanist, zoologist, and ornithologist. In his commitment to scientific research, he made arduous journeys to such distant lands as New Guinea and Sumatra – and he later brought this intellectual curiosity back to his vineyards. His descendants run the winery today, adhering to the high standards that Odoardo set so many decades ago.</p>
<p>Radda is one of Chianti Classico’s most important and historic villages. The Sangiovese here is powerful and complex, much as it is in Montalcino. The wines age well. The 2004 vintage was superb, bordering on spectacular. Vignavecchia Chianti Classico is rounding into shape. It is perfect when decanted or when it is served in large, balloon glasses.</p>
<p>All of the flavors of the Merlot are well integrated into the oak and Sangiovese. Balance is everything! The color is ruby to purple, an almost brilliant eggplant hue. The taste is peppery with dark fruit nuances from the Merlot. The best part for me was the prolonged, lingering, fruity finish. You can hold this wine for another 3-5 years, if you have the patience. Treat yourself. Buy some history.</p>

<p>When you meet Orsola Beccari you know immediately the Vignavecchia makes great wine. She is dynamic, fun and energetic just like the wines her family produces, and the 2004 Chianti Classico is no exception. This wine is an excellent bridge wine, the infusion of 15% merlot when blended with the oak aged sangiovese produces and international style Chianti Classico that appeals to the American palate. This wine has excellent balance, beautiful fruit and a delightful finish. A great choice with hard cheeses, roasted meats and even a pizza.</p>

(A <em>tweetup</em> is a meet up organized through twitter to bring members of specific twitter communities or of a specific area together.)  The #ShoreTweet hashtag was started by <a title="@currycolleen" href="http://twitter.com/currycolleen" target="_self">Colleen Curry</a> to plan the tweetup, and was the tag for dozens of posts from enthusiastic central Jersey tweeters.</p>
<p>Last night (a week after Colleen announced the tweetup) 14 of central Jersey&#8217;s finest Twitter users came together for the first time at Basil T&#8217;s.  The first half-hour  set the tone for the evening as people gathered around the table near the bar and met the faces behind the user names.  Introductions like &#8220;Oh, you&#8217;re <a title="@ShoreFlicks" href="http://twitter.com/shoreflicks" target="_blank">ShoreFlicks</a>!  I love your taste in movies!&#8221;  showed in a nutshell the value of these types of events to the Central Jersey online community.  The entire two hours (and then some) were filled with constant conversation over some complimentary pizza and <a title="Basil T's Homemade Beers" href="http://basilt.com/beers.php" target="_blank">micro brews</a>, among which the Red Rocket Ale seemed to be everyone&#8217;s favorite.  You can view some wonderful pictures taken from the event <strong><a title="Tweetup Pictures on Flickr" href="http://www.flickr.com/photos/kadath/sets/72157622234683924/">here</a></strong> thanks to <a title="Navesink on Twitter" href="http://twitter.com/Navesink" target="_blank">@Navesink!</a></p>

			<content:encoded><![CDATA[<p>Victor Rallo Jr., owner of Basil T’s Italian restaurant in Red Bank has travelled to Italy to add a hand selected signature wine to his 3 time award winning wine list.  Mr. Rallo has chosen one of Italy’s most chic and prized red wines, a Ripasso Valpolicella.</p>
<p>“Rispasso” means “to pass through a second time, to overhaul.”  It implies polishing up, perfecting.  When applied to Valpolicella wine, Ripasso signifies that the wine has been refermented in contact with Amarone, the region’s most prestigious red.</p>
<p> “I knew what I was looking for in my first Rallo wine: quality, value, a wine to enhance my food, a wine to please my customers,” Rallo said.  He went on to add, “I even knew the specific type of wine, but I had to find the right partner in Italy to make it to my specifications.”</p>
<p> “It has the power of Amarone and the grace of Valpolicella,” according to Mr. Rallo.  “It is made from Corvina and Rondinella grapes.  These are two important varietals, very local, very Italian.  My wine is aged for at least 18 months in large oak casks, also very traditionally Italian.”</p>
<p>To find the right supplier, Victor traveled to the Lessini Hills, just east of the Lake Garda near the fabled city of Verona.  He interviewed several wineries.  When he met Mara Castellani and her father, Sergio, of the Corte Mary Estate in Marano di Valpolicella, Mr. Rallo knew that he had found the right associates.</p>
<p>“This is an exciting wine.  It is concentrated, intense, and flavorful.  It will age well, but I like it as it is, young and very lively.”</p>
<p>Rallo Valpolicella Classico Superione Ripasso will be available at Basil T’s and Undici Restaurants in September.  You can enjoy this full, warm, rich, dry red with roasts, cheeses, or pasta dishes.</p>

<p>It&#8217;s the time of year that is truly special when you’re talking about fresh tomatoes, especially in the Garden State (to be even more specific, in Red Bank).</p>

<p>At<a title="Basil T's Brewery and Italian Grill" href="http://basilt.com" target="_blank"> Basil T&#8217;s Brewery and Italian Grill</a>, the best <a title="Basil T's Brewery and Italian Grill" href="http://basilt.com" target="_blank">Italian Restaurant in Red Bank</a>, we get daily deliveries of Jersey tomatoes from local farmers.  They ripen in eye&#8217;s view and are used in many of our specialty salads.  The tomato bowl with Jersey tomatoes and cucumbers, red onion, calamata olives, red wine and extra virgin olive oil is an all time favorite.  The Caprese salad is an Italian summer time tradition, which  pairs Jersey tomato with hand rolled mozzarella, fresh basil, extra virgin olive oil, and a touch of sea salt.</p>
<p>As the tomatoes ripen more fully, they make their way to the kitchen and into <strong>every </strong>tomato based sauce that we make (how Italian food was meant to be— homemade).</p>
